Wake up the old city before the tapas crawl. Start at Plaza de la Villa, Madrid’s oldest surviving square, where the 15th-century Casa de la Villa faces the baroque Casa de Cisneros across cobblestones older than the Habsburg dynasty. Then drift downhill through La Latina’s sloping lanes to Plaza de la Paja, the medieval market square where the city once traded its grain, ringed by tapas terraces and the brick Mudejar tower of the San Andrés chapel.
